This is “Sushi tub” made of “Sawara” wood.

Sushi tub is a tool used to make Sushi rice(vinegared rice for sushi), and is also used to serve Nigiri-zushi(hand-rolled sushi) and Chirashi-zushi(Scattered Sushi, unrolled).

The “Sawara” wood used in the making of this item is “Kiso Sawara” from the Kiso region of Nagano Prefecture.

The standing tree looks similar to Hinoki(Japanese Cypress), but as a wood it is softer, easier to handle, lighter, and more water-resistant than Hinoki.

Sawara wood absorbs moisture moderately well and has a weaker aroma than Hinoki. It is also well matched with food, and is familiar as a material for Rice tub and wooden lid.

Here we introduce sushi tubs use of a bamboo hoop (“hoop” is a ring that fits around a bowl).

This page introduces three large sizes with diameters of 39cm (15.35″), 42cm (16.54″) and 45cm (17.72″),
which can be used for large groups or for professional use in restaurants and other shops.

Sushi lids are also available for each size, but are sold separately.
(*When choosing a lid as well, please make sure that the Sushi tub and lid are the same size.
 For example, if the Sushi tub is 39cm (15.35″), the Sushi lid should also be 39cm (15.35″).

Sushi tubs are made by aligning strips of Sawara side panels to form a circular shape and fitting them with a woven bamboo hoop.Finally, a round bottom plate is inserted to finish it off.
Wooden tubs are also available with a copper hoop. The copper hoop is tightened using a special hoop-tightening machine, while the “bamboo hoop” is more sophisticated because the entire process, including the tightening of the hoop, is done by hand.
Furthermore, the entire production process of this Sushi tub is handled by one person, from shaving the side panels to selecting the bamboo and woven into a hoop.
Bamboo hoops are woven first and then fitted into wooden tubs, requiring a high level of skill and experience to weave them to exactly fit each size. The tightness of the hoop also depends on the maker’s intuition based on the expansion and contraction of the wood after it becomes a tub.
Please note that wooden tubs and bamboo hoops may have scratches or marks caused by hammering, but these are the result of the handmade process. If we sand the marks, the entire surface of the wood will become rougher, so we dare to leave the marks. Please understand in advance that they are not defective.
Also, as shown in this photo, there are some marks in the center of the bottom, which are caused by the process of rounding off the wood, but these are normal specifications.
Here is the rim. Smoothly sanded and finished per hand.
It is not made as a tub for water and may leak when filled with water. Please be careful.
The grain of the wood is so beautiful that it attracts you in.
Sushi tubs are sold individually, but sushi tub lids for each size are also available separately.
The sushi tub lid is also made of Sawara wood. It is placed on the rim of the Sushi tub.

Let us introduce them by size.

This is 39cm (15.35″) size.
It can hold 1.5kg(3.3lb) of rice.
This is 42cm (16.54″) size.
It can hold 2.25kg(4.96lb) of rice.
This is “45cm (17.72”) size.
It can hold 3kg(6.61lb) of rice.

Now, let us show you how it is actually used.
(In the photo here, the home size “30cm” (11.81″) is used.)

Before use, gently wipe the inside with a wet cloth. Wetting directly with water from the faucet is not recommended, as the wooden tub will contain too much water and the rice will become soggy. Wiping with a wet and tightly squeezed cloth is the best way to do it.
This is a 30cm (11.81″) Sushi tub with 3 cups of rice and a sprinkle of sushi vinegar.
While cooling the rice by fanning it with a paper fan, mix the rice as if cutting it to blend the sushi vinegar.
Sushi rice is ready to serve. You can put your favorite ingredients such as Nori(seaweed), Kinshi tamago(thin, sliced egg), Sashimi(raw fish), etc. on top, or make sushi rolls.

Here is a gorgeous Chirashi-zushi(Scattered Sushi, unrolled) served on this Sushi tub.
The gentle color and texture of the Sushi tub beautifully enhances the ingredients and stimulates the appetite.

It is also good for simply making Onigiri (rice balls), placing them on this Sushi tub,
covering them by Sushi tub lid, and storing them until they are ready to be served.
It will keep a good amount of humidity and will also be pleasing to the eye when served.

Also, you can use this Sushi tub as a table by arranging side dishes in a small dish or a small bowl on it.

The lid is very useful for keeping the rice balls and sushi you make from drying out.
The Sushi tub with the lid closed is also very appealing.

Please avoid direct sunlight and choose a well-ventilated place to store the product after use.

When everyone gathers around a meal served on a Sushi tub,
the mere presence of the Sushi tub makes the dining experience more colorful, lively, and enjoyable.

Sushi tubs add color to your daily meals. Please enjoy using it in various ways.

Please check the size, and also choose whether you would like it with or without a lid,
choose the size and combination you prefer.

— About care —

  • Before use, wipe the inside of the tub lightly with a wet cloth.
  • After each use, wash the inside and outside of the tub carefully with salt or powdered cleanser,
    without using synthetic detergent.
  • Do not leave the tub filled with water, as this will accelerate the deterioration of the wooden tub.
  • After washing and wiping the wooden tub,
    mist the inside of the tub with rubbing alcohol (ethanol) to prevent blackening and mold.
  • After washing in water, dry in a well-ventilated place (e.g., by a window or near an exhaust fan) in the shade.
    Direct exposure to sunlight will cause the wood to shrink due to rapid drying,
    which may cause the hoops to come off, crack, or deform.
  • Please do not use a dishwasher.
  • When not in use for longer than one month, the body and lid should be kept separate and wrapped in paper or cloth.
    The best place to store them is in a place with little temperature fluctuation and no humidity.
    When doing so, it is best to store with the lid open.
    Leaving the lid closed or storing in a plastic bag may cause “sap” to appear.
