美しく丁寧な仕事

切った野菜を入れるために購入しましたが、調理器具のひとつとして使うにはもったいないほど、とても美しく丁寧に作られており、調理中についこの竹ざるを、ウットリ眺めてしまうほどです。しかも、かなり頑丈な作り。末永く愛用できそうです。

These are shallow round bamboo colanders that can be placed on the table and used like plates to serve bread, rice balls, or noodles.

They come in four sizes: 27 cm (10.63″), 30 cm (11.81″), 34 cm (13.39″), and 37 cm (14.57″).

The material, Hachiku bamboo, has shorter nodes than Madake, splits more easily, and has resilience.
For regions where colanders are made by folding strips back at the edges, Hachiku is often used.
It is also used for making souke baskets in Toyama and bon-zaru in Sado.

Using this Hachiku, they are finished with a regular vertical-and-horizontal weave, also called zarume-ami.
When turned over, you can see the slightly whitish outer skin of Hachiku.
This craftsman is distinctive in that he uses relatively thick material. The horizontal strips that form the base (running vertically in this photo) are from the bamboo’s inner side, where splinters are likely, but they have been carefully beveled by seasoned handwork. Because he presses the hatchet with his hands and feet and draws each strip while checking the response, the precision of the strips is high and errors are almost nonexistent.
For the vertical strips, on the other hand, the green outer skin of the bamboo is placed facing inward to create a contrast of color. Since Hachiku is naturally light in color, this is a fine detail decided in consultation with the craftsman.
The rim is finished by sandwiching the edge of the woven colander with strips of bamboo for the rim.
To prevent the rim from shifting, it is nailed with brass and bound with copper wire.

Made in the same way as the strong commercial colanders,
this size of basket is finished with strength more than sufficient, always impressing us with its perfection.

Now, let us introduce the four sizes in order.

This is the 27 cm (10.63″) size. For noodles, it holds about 3.53–7.05 oz, suitable for 1–3 people.
For example, you can arrange bamboo leaves on the basket and serve rice balls at the table.
This is the 30 cm (11.81″) size. For noodles, it holds about 7.05–10.58 oz, suitable for 2–3 people.
Here it is shown holding 7.05 oz of somen.
It is also enjoyable to serve plenty of somen and share it together.
This is the 34 cm (13.39″) size. For noodles, it holds about 10.58–14.11 oz, suitable for 3–4 people.
This is the 37 cm (14.57″) size. For noodles, it holds about 14.11 oz–1.10 lb, suitable for 4–5 people.
Because this round colander has depth and holds a generous amount, it is also good for plum work. Here it is shown holding 4.41 lb of green plums in the 34 cm (13.39″) size.

It works well for noodles such as soba, somen, udon, or Chinese noodles,
as well as for bread like toast or baguettes.

It is also excellent for rice dishes such as rice balls
and sushi rolls, fried foods like tempura, French fries, or karaage,
and even as a serving tray for hot pot ingredients.

In the sink, this round colander can also be used without worry
for draining freshly boiled noodles and then cooling them in water.
The slight depth greatly expands its range of uses.

The video below shows the 37 cm (14.57″) size draining and rinsing about 7.05 oz of udon.

If there is no oil residue, there is no need to use detergent.
After use, wash with a brush under water, shake or lightly tap the back to drain thoroughly,
and dry well in a ventilated place.
