These are large, round, deep colander called “Age-zaru”.
“Age-zaru” is a tool used by soba (buckwheat noodle) shops to fry boiled soba or udon noodles from the big kettle.
This page introduces two sizes: 48cm (18.9″) and 51cm (20.08″) in diameter.
In addition to size, there are two types of rim wrapping.
The upper photo shows the “rattan double-wrapped” type finished only with rattan.
The lower photo shows the “rattan double-wrapped + copper wire wrapped” type.
There are four types in total, with two sizes of different diameters and different rim wraps used.
It is simple yet sturdy, and once you start using it, you will notice its lightness, ease of use, and durability.
However, since this colander has a rim core made of a wire, there is almost no fluctuation in the size of the colander.
It can be said that this colander is made in accordance with the standard for commercial use.
This Age-zaru is used for soba, Sōmen, udon, and Chinese noodles that have been boiled in plenty for commercial use.
It is made to fit the size of the kettle and can drain a good amount of water efficiently and well.
This product has been used by long-established soba noodle shops for many years.
If used well, they said it would keep for 1-2 years.
Not just for noodles, it is also good for washing, draining, and preparing vegetables for pots and pans,
or for cooking for a large group.
Bulky vegetables can also be served in generous portions.
It is also useful for harvesting plums and vegetables.
Other coffee bean roasters also find them useful for receiving beans from the roasting machine
and for taking off the rough heat.

According to records, Sado Island in Nīgata Prefecture has been shipping bamboo products off the island for more than 200 years.
Bamboo products were actively made on the island because of the high quality of bamboo suitable for bamboo crafts.
In the old days, many bamboo products were carried on ships
that sailed between Ōsaka and Hokkaidō on the Sea of Japan route.
Since thick bamboo does not grow in Hokkaidō,
many of the bamboo colanders and baskets were made on Sado Island, the ship’s port of call.
The bamboo products made on that Sado Island are characterized by their simple design and durability.
Many of them are for daily use, as if they were used in every Japanese household.
