This is a “Drop lid with hole” made by Kiso Sawara, which is useful for making simmered dishes.
The standing tree looks similar to Hinoki(Japanese Cypress), but as a wood it is softer, easier to handle, lighter, and more water-resistant than Hinoki.

Sawara absorbs moisture moderately and has a weaker aroma than Hinoki.
It is also well matched with food, and is familiar as a material for “Ohitsu(cooked rice container)” and “Sushi tub”.
The Drop lid made of that Sawara is excellent for retaining the heat of the cooking food and heating it evenly with its weight.

There are 6 sizes available, from a minimum diameter of 14cm (5.51″) to a maximum of 24cm (9.45″).

Soak Koya-Tofu(freeze-dried Tofu) in hot water and cut into bite-size pieces after pressing and washing,
and add to boiling broth, soy sauce, mirin(sweet sake), and sake.
Drop lid and cook over low-medium heat for about 7 minutes. It is finished when the green beans are added at the end and cooked through.

It also prevents the cooking liquid from evaporating all at once
and avoiding the food from cooking crumbles in the pot.
Please purchase a Drop lid that is one size smaller than the diameter of the pot you wish to use it with.
This example shows a 21cm (8.27″) pot with a Drop lid 18cm (7.09″).
*A Drop lid of 20cm (7.87″) can just barely be inserted, but the wood may expand and become stuck,
so a slightly smaller size is used.
