This is a drop lid made from Kiso sawara, perfect for simmered dishes.

The standing tree looks similar to Hinoki(Japanese Cypress), but as a wood it is softer, easier to handle, lighter, and more water-resistant than Hinoki.

Sawara gently absorbs moisture and has a more subdued scent compared to hinoki.
Its mild character makes it well suited for use with food, and it has long been favored for items like rice tubs and wooden rice containers.

A drop lid made from sawara helps retain heat and distributes it evenly over the ingredients, thanks to its gentle weight and natural properties.

Available in eight sizes, from 13cm to 26cm in diameter (approx. 5.12″ to 10.24″).

This is a look at how to make lemon-simmered sweet potatoes using the drop lid.

Place sweet potatoes in a pot and add enough water to cover them.
Bring to a boil, then place the drop lid on top and simmer over medium heat for about 10 minutes.
Toward the end, add lemon juice and let it gently infuse throughout. That’s it!

The lid also helps prevent simmering liquid from evaporating too quickly,
and keeps ingredients from bouncing around and falling apart during cooking.

For best results, choose a drop lid that is slightly smaller than the diameter of your pot.
In this example, we paired an 18cm (7.09″) drop lid with a 21cm (8.27″) Yukihira pot.
＊A 20cm (7.87″) lid will just barely fit, but since the wood can expand with moisture,
there is a risk it may become difficult to remove. For this reason, we chose a slightly smaller size.

To prevent odors from strong-smelling ingredients like fish from clinging to the surface,
we recommend moistening the entire lid with water before use.

In addition to being used as a drop lid,
