This is a lightweight cooking pot made from aluminum, featuring a stepped interior.
(Gas stove compatible; not suitable for induction cooktops.)

It is designed to pair with the Mini Japanese Steamer series introduced on a separate page.

This pot also works well on its own for everyday cooking—perfect for miso soup, simmered dishes, and more.

It is a commercial-grade design used in restaurant kitchens, known for being light, durable, and easy to handle.

The pot features vertical side handles that make it easy to carry and compact to store.
Different sizes can also be stacked for efficient storage.

This page introduces three smaller-sized Stepped Pots that are easy to use at home:
15.5cm, 18.5cm, and 21.5cm (approx. 6.10″ to 8.46″).

* A larger version of this series,
the “Large Stepped Pot (811118),” is also available with nearly the same design.
If you are purchasing a Premium Japanese Steamer (811117), we recommend choosing the Large Stepped Pot instead.

This pot features a hammered finish on both the inside and outside surfaces.

Hammering is a technique in which small dents are made in a sheet of metal—
in this case, aluminum—by striking it repeatedly with a hammer.

This process increases the strength of the pot,
and because the many small indentations increase the overall surface area,
it also improves heat conductivity by allowing more convective heat from the stove to be absorbed.

As a result, heat is transferred to the ingredients quickly and evenly,
making this pot ideal for slow-cooked dishes and simmered foods.

The rim of the pot flares outward slightly.
Seen from above, there is a stepped structure just below the rim, designed to help prevent boiling over.
Each pot is also designed to perfectly accommodate a Mini Japanese Steamer that is approx. 0.2″ smaller in diameter—making it especially convenient to use together.
The countless hammer marks are not only functional but also visually appealing, giving the pot a warm and handcrafted feel.
The handles are also made from aluminum. They are sturdy, but they do become hot during cooking, so please use a kitchen mitt or towel when handling.
The surface of the pot is treated with an anodized finish, which protects the aluminum and helps prevent darkening on the inside.
Let us introduce the three available sizes.
This is the 15.5cm (6.10″) pot—the smallest in the aluminum pot series. It pairs well with the 15cm (5.91″) Mini Japanese Steamer.
It’s also a great size for preparing a single serving of ramen or simmered udon.
This is the 18.5cm (7.28″) size. It fits the 18cm (7.09″) Mini Japanese Steamer.
Ideal for making miso soup for 2 to 3 people.
This is the 21.5cm (8.46″) size. It matches the 21cm (8.27″) Mini Japanese Steamer.
Just right for miso soup or simmered dishes for 4 to 5 people—easy to use and handle.
When steaming with a seiro, begin by filling the pot with plenty of water and bringing it to a boil.
Here, a 21.5cm (8.46″) Stepped Pot is paired with a 21cm (8.27″) Mini Japanese Steamer. Their combination has a quietly refined presence—beautifully balanced and deeply satisfying to use and see.
When using a steamer that fits the pot exactly, no steaming plate is required—the seiro can be placed directly on the stepped rim.
Recommended combinations of Stepped Pot and Mini Japanese Steamer:
15.5cm (6.10″) Pot → 15cm (5.91″) Steamer
18.5cm (7.28″) Pot → 18cm (7.09″) Steamer
21.5cm (8.46″) Pot → 21cm (8.27″) Steamer

We also offer wooden drop lids (made from sawara cypress)
that are especially useful when simmering dishes:
– Drop Lid (811113)
– Perforated Drop Lid (811112)

Please choose a lid that is slightly smaller than the diameter of your pot.

Recommended Drop Lid (Solid or Perforated) Sizes for Each Pot:

  • 15.5cm (6.10″) Pot → 13–14cm (5.12″–5.51″) Drop Lid
  • 18.5cm (7.28″) Pot → 15–16cm (5.91″–6.30″) Drop Lid
  • 21.5cm (8.46″) Pot → 18cm (7.09″) Drop Lid

We hope this helps as a size reference.

Whether paired with a steamer or a drop lid—or used entirely on its own—
this step-rim pot is a reliable tool you’ll find yourself reaching for in daily cooking.

Please choose the size that best suits your needs.
